Basil Pesto

I had an abundant crop of basil this summer thanks to my friend, Keri who brought me an herbal housewarming gift!

So, I started making pesto and it turned out amazing {if I do say so myself}!  Homemade pesto is exponentially better than store bought pesto {actually, there’s really no comparison} AND it takes less than 10 minutes.  Here’s the recipe:

Basil Pesto

Ingredients:

2 cups packed fresh basil leaves {rinsed}

4 cloves of garlic

1/3 cup walnuts

1/2 cup olive oil

1/2 cup freshly grated parmesan cheese

pinch of salt and pepper

Instructions:

Combine basil, garlic, and walnuts in food processor and pulse until smooth.  Add olive oil, salt, pepper, and parmesan and pulse until smoother.  Serve over your favorite pasta, use as a dip for vegetables or crackers, or use to flavor marinara or soups!
